I love preparing carrots and using them in a multitude of ways. I eat them all the time – mostly because my vision is so poor and I’m keeping hope alive that one day, it’ll get better with the mighty help of carrots! LOL
This recipe features sweet roasted carrots with a tangy greek yogurt sauce. YUM.

What you’ll need:
- Carrots:
- Rainbow or Orange Carrots
- Olive Oil
- Seasoning:
- Salt
- Pepper
- Greek Yogurt Sauce:
- 1 Cup Greek Yogurt
- about a teaspoon of Cumin
- 1 tablespoon minced garlic
- 1 tablespoon Minced ginger
- 1 tablespoon Grated onion
- 1 tablespoon of honey
- half of handful of Cilantro
- 1/2 Lime (add the whole thang if you like more)
- Lemon Zest

What you’ll do:
- For the Carrots:
- Preheat oven to 450 degrees F
- Line a baking sheet with parchment paper
- Slice carrots length-wise, in half (or quarters for the big ones)
- Place carrots on baking sheet, toss in olive oil, and season with salt and pepper
- Roast for 25-35 minutes
- For the Sauce:
- Combine all sauce ingredients and TASTE
- If it needs more of something, add a little bit of salt or pepper – try it again and adjust to your liking
- Plate the roasted carrots over a bed of the Greek yogurt sauce and garnish with lemon zest and cilantro.
