Turn your leftover cooked quinoa into this delicious fried quinoa with roasted salmon dish! Its easy, and you can use nearly whatever veggies you have on hand to enhance it.

What you’ll need:

  • Fried Quinoa:
    • Cooked Quinoa
      • I cook my quinoa in a 2:1 ratio of chicken stock to quinoa
    • Julienned Carrots
    • Jalapeño
    • Onion
    • Garlic
    • Ginger
    • Eggs
    • Avocado
    • Soy Sauce
    • Sesame Oil
    • Butter
    • Salt and Pepper
  •  Salmon:
    • Salmon
    • Brown Sugar
    • Soy Sauce
    • Cooking Spray

What you’ll do:

  • Salmon:
    • Preheat oven to 425 degrees F
    • Spray baking dish with cooking spray – I use canola oil spray
    • Place the salmon in the baking dish
      • Cover salmon with soy sauce and brown sugar (this will caramelize and become delicious)
    • Roast for 12-15 minutes
    • After the salmon has cooked spoon some of the glaze over the salmon that has fallen off it
  • Fried Quinoa:
    • Sauté onions, jalapeño, garlic, and ginger in butter and sesame oil until fragrant and season with a dash of salt and pepper
    • Add the julienned  carrots, diced avocado, and cooked quinoa
      • I cook my quinoa in a 2:1 ratio of chicken stock to quiona
    •  Stir in sesame oil and soy sauce – enough to coat the quinoa
    • Push the fried quinoa mixture to one end of the pan and on the other side crack a couple eggs and scramble them
    • Once the eggs are done, fold everything together and serve with the roasted salmon
